Beautiful Dough Cookie

Beautiful fat bombs ideal for keto diet, but we'll take advantage of any excuse to eat cookie dough - they're perfect for storing in the freezer for when the craving hits!


1/2 cups (1 stick) butter, softened

1/3 cups Keto friendly powdered sugar

1/2 teaspoons of pure vanilla extract

1/2 teaspoons of kosher salt

2 cups Almond flour

2/ 3 cups chocolate chips

In a large bowl, stir the butter lightly and loosely with a hand mixer. Add sugar, vanilla and salt and stir. Slowly stir in almond flour till there are no more dry spots, then fold in the chocolate chips. Cover the bowl with plastic wrap. Place in the refrigerator for fifteen to twenty minutes to line a bit additional firmly. Use a little cookie scoop to scoop the batter into small balls.

Store within the icebox if you plan to eat within the week or in the electric refrigerator for up to one month.
