Pizza pepperoni for breakfast

Ingredients (8 servings):

120 gr. almond flour

30 gr. coconut flour

 salt to taste

1 Art. spoon apple cider vinegar

1 teaspoon xanthan gum

6 Art. spoons of butter

100 gr. mozzarella cheese

15 pcs. pepperoni (slice)

6 pcs. egg

220 ml cream

Italian herbs to taste

Steps to follow:

Add almond flour, coconut flour, salt, xanthan gum, and vinegar to a food processor. Pulse several times, then add cold oil. Continue pulsing until the dough is like bread crumbs. Add the egg and pulse again. The dough will form into a ball. Wrap with plastic wrap and refrigerate for 45-60 minutes.

 Grease a baking dish with butter, place the dough in the baking dish and knead it with your fingers along the bottom and edges. Place half of the cheese and pepperoni on the base. Combine eggs, cream, herbs and salt. Pour the mixture into a mold, top with the remaining cheese and pepperoni.

Cover with foil and bake for about 35-45 minutes in an oven preheated to 180 ° C. Remove the foil and continue baking for another 10-15 minutes.
