Berry pie

Ingredients for 10 servings:

Berry base

  • 650 g of frozen berries (for example: 200 g or 2 cups of blackberries, 300 g or 3 cups of blueberries and 150 g or 1 cup of raspberries)
  • 75 g (1/2 cup) of granulated sweetener
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon cedar
  • 1/3 teaspoon ground cinnamon
  • 3 teaspoons ground chia seeds

Sweet fat dough

  • 170 g (1.5 cups) of grated mozzarella
  • 90 g (1 cup) of ordinary almond flour (coarsely ground or ground almond almond flour). If you are going to make a pie from almond flour, especially finely ground, you will need 75 g (3/4 cup) of this flour.
  • 1 medium egg at room temperature
  • 2 tablespoons granulated erythritol

Decoration

  • 1/2 large egg white
  • 3/4 teaspoon granulated erythritol

Steps to follow:

  • Put frozen berries, sweetener, lemon juice, lemon zest and cinnamon in a saucepan. Cook the berries over medium heat for about 7 minutes, stirring occasionally.
  • Add chia seeds. Heat the mixture for 2 minutes, then remove from the heat and cool for about 30 minutes to thicken. Try the resulting berry mass to taste. Adjust the degree of sweetness and density of the berry mixture according to your preferences. If you like a thicker consistency, add more chia seeds. Transfer the berry base to a pie pan.
  • Meanwhile, prepare the dough. Melt the mozzarella in the microwave on high power for 60 seconds. Then stir it with a rubber spatula and send in the microwave for another 30 seconds. Add almond flour and egg to the mozzarella.
  • Roll out the dough between 2 sheets of parchment paper and send it in the refrigerator for 20-30 minutes to cool. Then, using a pizza knife or a simple sharp knife, cut strips from the dough about 1 cm wide. At the same time cut the dough diagonally.
  • To make a mesh surface of the cake, you need to place the lower strips of dough on top of the berries, and then, starting on one side, add a strip of dough perpendicularly and simply lift the lower strips of dough up and down to get a "wicker". Finally, cut strips of dough around the edges, then fry them with a little whipped egg white and sprinkle with low-carbohydrate sweetener.
  • Preheat the oven with a fan to 200 ℃ (up to 180 ℃ without a fan). Bake the berry pie for about 15-25 minutes until golden brown on the surface.
