Keto chicken with tomatoes and basil



  • 4 pcs. boneless chicken breasts with / or without skin
  • 16 pcs. Cherry tomatoes
  • 1 table. spoon. olive oil
  • salt to taste
  • pinches of pepper to taste

Basil oil

  • ¼ glass ghee
  • 2 table. spoon. finely chopped basil
  • 1 pcs. lemon (zest only)
  • 1 pcs. minced garlic clove
Steps to follow:

  • Preheat an open grill (if temperature control is available, preheat to 250 C) / or oven to 220 C. Place a cast-iron skillet (or grill pan) on the grill/oven so that it warms up with the grill/oven.
  • Season the chicken on both sides with salt and pepper. In a small bowl, combine tomatoes with olive oil and season with salt and pepper.
  • When the grill (or oven) is hot, place the chicken breasts, skin side down, in the pan. Then add the tomatoes.
  • Cook for 25-30 minutes, until the chicken has reached an internal temperature of 73 ° C (cooked temperature) and the skin of the tomato is shriveled. Close the grill lid/oven door while cooking.
  • Do not turn the chicken over, leaving the skin facing down throughout the cooking time. The chicken will not burn as the grill/oven temperature is kept constant. If you are using a grill without temperature control, turn the chicken halfway through the cooking time.
  • While the chicken is cooking, make the basil oil. In a small bowl, combine the ghee, basil, lemon zest, and garlic. Mash with a fork until thoroughly mixed.
  • When the breast is done, transfer the breast and the tomatoes to a serving plate and season with 1 tablespoon of basil oil.
