Keto diet eggs


  • 6 pcs. hard-boiled chicken eggs, room temperature
  • ¼ Homemade mayonnaise
  • 1 teaspoon. spoon vinegar
  • 1 teaspoon. spoon Dijon mustard
  •  ⅛ tea. spoon garlic powder
  • 1 pinch of paprika for serving
  • 1 pc. sprig of dill/parsley for serving
  • 1 pinch of salt to taste
  • 1 pinch of ground black pepper to taste

Steps to follow:

  • Put the chicken eggs in a pan of cold water so that the eggs are covered with water a few inches. Cover the pan with a lid and turn on high heat. When the water boils, reduce the heat and cook the eggs for 10-15 minutes. Check one egg to see if it is cooked to your liking.
  • Clean the eggs from the shell, cut in half from the blunt end to the sharp one. Transfer the yolks to a bowl, set the whites aside.
  • Mix mayonnaise, vinegar, Dijon mustard and garlic powder with egg yolks and until smooth. Season with salt and pepper to taste. Use a hand mixer to get a smoother texture.
  • Fill each half of the egg white with an even amount of yolk filling. For convenience, you can use a pastry bag. Garnish with chopped greens and sprinkle with paprika before serving.
