Pancakes with cream cheese

Ingredients (servings 4 x 3 pancakes):


Cream cheese topping:

  • 230 g cream/curd cheese
  • 2 tbsp olive oil
  • 2 tbsp pesto
  • half thinly sliced ​​red onion
  •  salt/pepper to taste

Pancakes:

  • 5 pcs. chicken eggs
  • 250 g cottage cheese
  • 1 tbsp psyllium
  • 1 tsp chopped garlic
  • salt/pepper to taste
  • 2 tbsp frying oils

Steps to follow:

  • In a bowl until smooth, combine the topping ingredients - cream cheese, pesto, and a spoonful of olive oil.
  • Let's move on to pancakes. In another container, mix eggs, cottage cheese, psyllium, minced garlic, and salt to taste. We also stir until a homogeneous consistency is obtained and leave for 10 minutes.
  • Preheat a skillet and melt the butter over medium heat. We spread the pancake dough in small portions with a diameter of about 7-9 cm. Fry pancakes on both sides until golden brown.
  • Place the pancakes on a plate and top with the cream cheese, chopped onion, and leftover olive oil topping. Season with extra salt and pepper to taste.
